Traditional pancakes are made with white flour, but you don't have to worry about missing on pancakes when you are gluten-free!
There are so many gluten-free flours out there.
My favorites are:
- buckwheat flour
- rice flour
- gluten-free oat flour
- millet flour
Keep in mind, every flour has a different texture and some flours need to be used in combinations.
But, buckwheat flour is the exception! You can use buckwheat flour on its own and the pancakes will be so good.

This recipe is so simple, you will need only one bowl to make these vegan banana pancakes.
Start by adding mashed banana into a bowl along with sugar.
Then add buckwheat flour, baking powder, vanilla, and soy milk.
