Soft spooky Halloween cookies - gluten-free and vegan recipe

Ingredients
  

  • 1 cup dried dates
  • 1/3 cup plant milk
  • 1/2 cup gluten-free oat flour
  • 1/2 cup rice flour
  • 1 tsp baking powder
  • A pinch of salt
  • 1 tsp vanilla
  • 1/3 cup melted vegan butter

Method
 

  1. First, put dates and plant milk into the blender or food processor and blend until smooth.
  2. In a large bowl combine dry ingredients, which are oat flour, rice flour, baking powder, and a pinch of salt.
  3. Add date mixture into the dry ingredients along with vanilla and melted vegan butter. Create a thick dough.
  4. The last step is to cut circle shapes and bake it for 7 mins at 150°C (300F)
  5. Let the cookies cool down completely before icing them with chocolate.
  6. Put the chocolate into a piping bag and create spider webs, pumpkin shapes, or bat shapes. Enjoy!
