Taditional poppy seed noodles in the gluten-free and vegan version

If you've ever visited middle European countries, maybe you've come across these traditional poppy seed noodles. But, since my website is primarily focused on creating gluten-free and vegan meals, this recipe was also created in this specific allergy-free version.

Ingredients
  

Potato noodles
  • 3/4 cup grated and cooked potatoes
  • 1/2 cup rice flour
  • 1/2 cup buckwheat flour
  • 1 tsp baking powder
  • A pinch of salt
Toppings
  • 1/2 cup grounded poppy seeds
  • 1/3 cup melted vegan butter
  • 1/3 cup caster sugar

Method
 

  1. In a large bowl combine ingredients for potato noodles. Create stretchy but thick dough. You should be able to form noodles with your hands. If the dough is too dry simply add 2 tbsp of water or it is too wet, add in a few tbsp of flour. It really depends on the potatoes.
  2. Next, in a large pot bring water to a boil and gently add each noodle in and continue to boil until the noodles float on top. You should cook them for about 5 minutes.
  3. When the noodles are ready, pour the vegan butter on top along with sugar and ground poppy seeds. Enjoy!
