In a large bowl combine ingredients for potato noodles. Create stretchy but thick dough. You should be able to form noodles with your hands. If the dough is too dry simply add 2 tbsp of water or it is too wet, add in a few tbsp of flour. It really depends on the potatoes.
Next, in a large pot bring water to a boil and gently add each noodle in and continue to boil until the noodles float on top. You should cook them for about 5 minutes.
When the noodles are ready, pour the vegan butter on top along with sugar and ground poppy seeds. Enjoy!
