Traditional poppy seed noodles in the gluten-free and vegan version


If you've ever visited middle European countries, maybe you've come across these traditional poppy seed noodles. But, since my website is primarily focused on creating gluten-free and vegan meals, this recipe was also created in this specific allergy-free version. These Gluten-free poppy seed noodles are incredible. They are full of flavor and so soft.

I used to love these poppy seed noodles when I was a kid. There is just something special about the texture, taste, and overall deliciousness. This recipe is so simple but so amazing.

Poppyseed noodles are made with cooked potatoes and flour which creates an amazing texture. They are originally served with melted butter and topped with sugar and grounded poppy seeds. This combination is absolutely amazing.

As I mentioned before these seeds are superfoods! The nutritional value is amazing and the taste is literally incredible. If you can find poppy seeds at the store, definitely give them a try.

Let's make these amazing gluten-free poppy seed noodles

This recipe is quite simple and very easy to make.

For this recipe you will need only one bowl.

Firstly, combine all of those ingredients for the dough:

  • grated and cooked potatoes
  • rice flour
  • buckwheat flour
  • baking powder
  • a pinch of salt

The dough should be thick but stretchy. You should create noodles with your hands very easily.

But if you feel like the dough needs more flour, feel free to add more. The same thing applies in the opposite situation. If it's too dry, just add a little bit of water.

It really depends on potatoes you are using. Some potatoes are moist and some of them are dry.

Overall, you should be able to work with the dough really easily.

When you are ready to cook them, prepare a large pot with water, and bring it to a boil. Gently add each noodle into a pot and wait until they are cooked completely.

It should take about 5 minutes, but you can see them floating on the surface of the water. This is a typical sign that they are done.

Serve them with melted vegan butter and sprinkle sugar on top with gound poppy seeds. Enjoy!

Ingredients
  

Potato noodles

  • 3/4 cup grated and cooked potatoes
  • 1/2 cup rice flour
  • 1/2 cup buckwheat flour
  • 1 tsp baking powder
  • A pinch of salt

Toppings

  • 1/2 cup grounded poppy seeds
  • 1/3 cup melted vegan butter
  • 1/3 cup caster sugar

Instructions
 

  • In a large bowl combine ingredients for potato noodles. Create stretchy but thick dough. You should be able to form noodles with your hands. If the dough is too dry simply add 2 tbsp of water or it is too wet, add in a few tbsp of flour. It really depends on the potatoes.
  • Next, in a large pot bring water to a boil and gently add each noodle in and continue to boil until the noodles float on top. You should cook them for about 5 minutes.
  • When the noodles are ready, pour the vegan butter on top along with sugar and ground poppy seeds. Enjoy!
