In a larger bowl combine all the dry ingredients.
Next, add in date syrup, walnut butter, vanilla, coconut oil, and lastly pumpkin puree. Make a thick dough. If the dough seems to be a little bit dry, add 2-3 tbsp of soy milk.
The dough should be thicker, but not hard rock. It should feel nice and soft on hands.
Finally, shape balls and flatten them in your hands, to create cookie shapes.
Bake them at 150°C for 15-20 minutes.
When they are cold, feel free to top each cookie with icing sugar. Enjoy!
