- In a large bowl combine rice flour, oat flour, baking powder, baking soda, and salt.
- Next, add dates into a blender along with water, and vanilla. Blend until smooth and creamy.
- Add date mixture into dry ingredients and add lemon juice, flax "egg" and combine well. The batter should be creamy and fluffy.
- The last step is to add raspberries and chocolate chips. Carefully combine everything together and pour the batter into a muffin pan. Bake at 170°C (350F) for about 30 minutes. Enjoy!
