Ingredients
- 100 g rice flour
- 50 g gluten-free oat flour
- 1 tsp baking powder
- 1/3 tsp baking soda
- A pinch of salt
- 100 g dates
- 300 g water
- 1 tsp vanilla
- Juice of half of lemon
- 1 tbsp flax meal + 4 tbsp water
- 1 cup raspberries
- 1/2 cup chocolate chips
Instructions
- In a large bowl combine rice flour, oat flour, baking powder, baking soda, and salt.
- Next, add dates into a blender along with water, and vanilla. Blend until smooth and creamy.
- Add date mixture into dry ingredients and add lemon juice, flax "egg" and combine well. The batter should be creamy and fluffy.
