Warm, creamy, and fragrant. This is how I would describe the creamiest vegan cauliflower soup. This soup is such a comfort food. It is super easy to make and very simple.

Ingredients
  

  • 1/2 cup chopped onion
  • 2 tbsp minced garlic
  • 2 tbsp coconut oil
  • 1 tsp veggie stock powder
  • 2 bay leaves
  • 2 tbsp vegan butter
  • 1 large chopped potato
  • 1 head of cauliflower *pre-cooked
  • 3 cups water
  • 1/2 cup soy cream
  • 3 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

  1. In a large pot fry garlic and onion in coconut oil until golden. Add veggie stock powder and bay leaves, vegan butter, and cook for 2 minutes.
  2. Next, add chopped potato and pre-cooked cauliflower, and roast for about 2 minutes.
  3. Lastly, add water and bring it to a boil. Cover and simmer for 20 minutes.
  4. Remove lovage leaves and blend the soup with a hand blender.
  5. Finally, add soy cream, lemon juice, salt, and pepper. Enjoy warm.
