Ingredients  

  • 3/4 cup gluten-free oat flour
  • 1/2 cup buckwheat flour
  • 1/3 cup rice flour
  • 1 tsp baking powder
  • 1/3 tsp baking soda
  • A pinch of salt
  • 1 tsp cinnamon
  • 1/2 cup brown sugar
  • 1 cup soy milk
  • Juice of half of lemon
  • 1 tsp vanilla extract
  • 3 tbsp applesauce
  • 1/3 cup melted vegan butter
  • 1/2 cup shredded carrots

Instructions 

  • In a large bowl combine oat flour, buckwheat flour, rice flour, baking powder, baking soda, salt, cinnamon, and sugar.
  • In the other bowl combine soy milk, lemon juice, and vanilla extract.
  • Pour the wet ingredients into dry and combine. Next, add melted vegan butter, apple sauce, and shredded carrots.
  • Combine and create a smooth and creamy batter. Pour the batter into a loaf cake pan and bake at 400F (200°C) for about 50 minutes.
  • Serve completely cold, so it is easier to cut into slices. Enjoy!
