Vegan creamy mushroom pasta sauce

Ingredients
  

  • 2 tbsp oil
  • 2 tsp veggie broth powder
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 360 g firm tofu
  • 2 1/2 cups soy milk
  • Juice of half of lemon
  • 2 cups chopped mushrooms

Method
 

  1. First, you will need to blend tofu with soy milk in a high-speed blender into a creamy consistency.
  2. Next, add oil into a pan along with garlic powder and vegetable broth seasoning and fry until fragrant. Then add in tofu mixture and bring it to a boil. Lastly, add lemon juice and black pepper.
  3. The last step is to fry mushrooms into crispy. Add 1 tbsp of oil into a pan and cook mushrooms until there is no more liquid. Next add 1/2 tsp veggie broth powder, 1/2 tsp garlic powder, and cook until crispy and golden from both sides.
  4. Serve with cooked pasta, creamy sauce roasted mushrooms, and fresh arugula. Enjoy!
