Ingredients
  

  • 2 1/2 cups corn pasta
  • 1 cup cooked chickpeas
  • 1/2 cup vegan greek style cheese
  • 1 cup chopped tomatoes
  • 1 cup chopped cucumber
  • 1/3 cup chopped olives
  • 1/3 cup chopped chives
Avocado sauce
  • 1 large avocado
  • 1/4 cup water
  • 2 tbsp olive oil
  • Juice of half of lemon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Method
 

  1. First, cook the pasta following the instructions on the package. It usually takes about 10-15 minutes.
  2. Meanwhile, chop tomatoes, cucumber, vegan cheese, olives, and chives.
  3. When the pasta is ready, drain it and add it into a large bowl along with tomatoes, cucumber, cheese, olives, chickpeas, and chives. Combine and set aside.
  4. Next, in a food processor add ingredients for the avocado sauce and blend until smooth and creamy.
  5. Pour the sauce into the pasta salad and mix until everything is combined.
  6. Serve with fresh chives on top. Enjoy!
