I love this vegan cheese by violife! In our country, it is called greek style cheese, but in the US I found it under the name Just like Greek feta. Anyways, this cheese created such a wonderful taste in this salad. It is so creamy and so delightful.
When the pasta is done, drain it and put it into a bowl along with veggies, chickpeas, and vegan cheese. Combine and set aside.

Ingredients
- 2 1/2 cups corn pasta
- 1 cup cooked chickpeas
- 1/2 cup vegan greek style cheese
- 1 cup chopped tomatoes
- 1 cup chopped cucumber
- 1/3 cup chopped olives
- 1/3 cup chopped chives
Avocado sauce
- 1 large avocado
- 1/4 cup water
- 2 tbsp olive oil
- Juice of half of lemon
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
Instructions
- First, cook the pasta following the instructions on the package. It usually takes about 10-15 minutes.
- Meanwhile, chop tomatoes, cucumber, vegan cheese, olives, and chives.
- When the pasta is ready, drain it and add it into a large bowl along with tomatoes, cucumber, cheese, olives, chickpeas, and chives. Combine and set aside.
- Next, in a food processor add ingredients for the avocado sauce and blend until smooth and creamy.
- Pour the sauce into the pasta salad and mix until everything is combined.
