Pasta can be prepared in so many different ways. You can serve it with sauce, with veggies, cold, warm, there are endless options.

However, this pasta recipe is served cold, so it is perfect on warm days.

This avocado sauce combines everything together. It's so creamy and delicious. A combination of chickpeas, veggies, and pasta is totally scrumptious.

This avocado sauce is also very easy to make. You will need only a few ingredients and you are ready to make this pasta salad a whole another level!

Let's make this delicious vegan pasta salad with avocado sauce

First, you will need to cook your pasta according to your packaging information. It usually takes 10-15 minutes. In this recipe, I used corn pasta. It works wonderfully. But feel free to use whatever gluten-free pasta you like.

Meanwhile, chop all of your veggies.

For this recipe you will need:

  • tomatoes
  • cucumber
  • olives
  • chives

Add those veggies into a bowl along with cooked chickpeas and vegan greek style cheese.

I love this vegan cheese by violife! In our country, it is called greek style cheese, but in the US I found it under the name Just like Greek feta. Anyways, this cheese created such a wonderful taste in this salad. It is so creamy and so delightful.

When the pasta is done, drain it and put it into a bowl along with veggies, chickpeas, and vegan cheese. Combine and set aside.

Lastly, let's make avocado sauce.

This vegan pasta salad with avocado sauce is so delicious. It is perfect on warm days because you can serve it cold. The recipe is also very easy to make. The salad is refreshing, creamy and so flavorful.

For this amazing creamy sauce you will need:

  • avocado
  • water
  • olive oil
  • Juice of half of lemon
  • salt
  • black pepper
  • garlic powder

Put all of these ingredients into a blender or a food processor, and blend until smooth and creamy.

The sauce will be rich in flavors and maybe too strong but don't worry, we are going to combine it with a salad so it will be just ok!

Pour the sauce over the salad and mix until everything is combined and covered in sauce.

Serve with fresh chives. Enjoy cold.

Ingredients
  

  • 2 1/2 cups corn pasta
  • 1 cup cooked chickpeas
  • 1/2 cup vegan greek style cheese
  • 1 cup chopped tomatoes
  • 1 cup chopped cucumber
  • 1/3 cup chopped olives
  • 1/3 cup chopped chives

Avocado sauce

  • 1 large avocado
  • 1/4 cup water
  • 2 tbsp olive oil
  • Juice of half of lemon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Instructions
 

  • First, cook the pasta following the instructions on the package. It usually takes about 10-15 minutes.
  • Meanwhile, chop tomatoes, cucumber, vegan cheese, olives, and chives.
  • When the pasta is ready, drain it and add it into a large bowl along with tomatoes, cucumber, cheese, olives, chickpeas, and chives. Combine and set aside.
  • Next, in a food processor add ingredients for the avocado sauce and blend until smooth and creamy.
  • Pour the sauce into the pasta salad and mix until everything is combined.
  • Serve with fresh chives on top. Enjoy!

    Two confessions — I used to hate avocados because I thought they tasted like wet grass and only about a year ago I suddenly started to like them; and when I bought the Violife greek style cheese for the first time, I didn't really like it either 😀 But now I LOVE both avocados and the cheese! This pasta looks absolutely incredible and perfect for hot summer days, plus it has everything I like, so I can't wait to try your recipe!
