Method
- Firstly, roast the tomatoes in the oven at 400F (200°C) for about 30 minutes.
- Meanwhile, roast the garlic in 2 tbsp oil until crispy and fragrant.
- In a blender add tofu, soy milk, the rest of the oil, roasted garlic, salt, pepper, and lemon juice. Blend until smooth and creamy.
- Serve with roasted tomatoes and freshly cracked pepper. Enjoy!
