6 oz firm tofu 1/4 cup soy milk 1/4 cup unflavored oil 1 tsp salt 1/2 tsp black pepper 2 tbsp minced garlic 2 tbsp lemon juice 2 cups tomatoes
Firstly, roast the tomatoes in the oven at 400F (200°C) for about 30 minutes.
Meanwhile, roast the garlic in 2 tbsp oil until crispy and fragrant.
In a blender add tofu, soy milk, the rest of the oil, roasted garlic, salt, pepper, and lemon juice. Blend until smooth and creamy.
Serve with roasted tomatoes and freshly cracked pepper. Enjoy!
