Vegan zucchini potato fritters
These vegan zucchini potato fritters are just so delicious. They are very easy to make and the recipe requires only a few ingredients. Vegan zucchini fritters are perfect for a healthy lunch or simple dinner.

- 1 cup grated potatoes
- 1 1/2 cup grated zucchini * squeezed
- 1 tbsp minced garlic
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 cup buckwheat flour
- 2 tbsp oil
In a larger bowl combine all of these ingredients and create a thicker batter.
Heat oil in a non-stick frying pan over medium-high heat. Drop 1 heaping tbsp of zucchini mixture into the pan and create fritters. Cook from both sides until golden brown.
Serve with vegan mayonnaise or homemade salsa. Enjoy!
