Vegan zucchini potato fritters

These vegan zucchini potato fritters are just so delicious. They are very easy to make and the recipe requires only a few ingredients. Vegan zucchini fritters are perfect for a healthy lunch or simple dinner.

Ingredients
  

  • 1 cup grated potatoes
  • 1 1/2 cup grated zucchini * squeezed
  • 1 tbsp minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 cup buckwheat flour
  • 2 tbsp oil

Method
 

  1. In a larger bowl combine all of these ingredients and create a thicker batter.
  2. Heat oil in a non-stick frying pan over medium-high heat. Drop 1 heaping tbsp of zucchini mixture into the pan and create fritters. Cook from both sides until golden brown.
  3. Serve with vegan mayonnaise or homemade salsa. Enjoy!
