I love tortillas so much and this recipe is just perfection.

These chickpeas tortillas are so easy to make and yet so delicious. They are perfectly flexible and you can fill them with various vegetables or eat them on their own. 

Can you make tortillas corn-free?

Absolutely yes!

Tortillas can be made with different types of flour. In this recipe, I used chickpea flour, but you can make tortillas out of buckwheat, rice, or even oat flour.

However, corn tortillas are well known but don't worry, you can totally make tortillas with different flour.

Let's make these delicious gluten-free chickpea tortillas

Making these tortillas is so simple!

The recipe contains only 4 ingredients and one of them is just water. This recipe is so great because it doesn't require lots of gluten-free flours.

The main ingredients are chickpea and tapioca flour. If you don't have chickpea flour, don't worry. You can make your own! If you have a high-speed blender, you can actually make your own chickpea flour at home from dried chickpeas.

I make this recipe so often, so I usually eyeball all of those ingredients, and I'm always adding water according to consistency.

The prepared batter mixture should look like a pancake batter. Not too thick and not too thin. Of course, you can add various herbs or seeds to the batter, but it is just up to you.

In a medium-sized bowl combine chickpea flour, tapioca flour, flax meal, and water. Combine, and let the batter sit for about 10 minutes.

After 10 minutes the batter will be thicker and easier to work with. Definitely don't skip this step, it is really important, otherwise, the tortillas will break apart and you won't be able to flip them on the skillet.

Cook the tortillas on medium-high heat from both sides until golden brown.

Serve the tortillas with veggies, beans, and the most importantly avocado. However, you can fill your tortillas with whatever you want, such as vegan cheese, salsa and so much more.

These amazing gluten-free chickpea tortillas are so easy to make and very delicious. You will need only four ingredients, which is absolutely great. Serve them for a lunch or easy dinner.

Ingredients
  

  • 1/3 cup chickpea flour
  • 1/3 cup tapioca flour
  • 1 tbsp  flax meal
  • 1/2 cup water

Instructions
 

  • In a bowl combine flours and flax meal, add in water, and mix it properly. Let it sit for about 10-15 mins.
  • Cook on a non-stick skillet over medium-high heat from both sides until golden.
  • Serve with greens, beans, veggies, and avocado. Enjoy.
