What is the best way to serve ravioli?
You can serve ravioli in many ways.
There are no limits. Some people prefer serving them with butter, or cheese, others love them with creamy sauce.
In this recipe, I roasted garlic in butter and a little bit of neutral oil to create a smooth flavor.
Roasted garlic makes everything better. The combination of creamy pumpkin ravioli and roasted garlic is just so good.
Don't forget to add some herbs and spices to enhance the flavors even more!
Can you freeze freshly made ravioli?
Yes! Ravioli are so easy to freeze.
Simply cook them in the salted water, and when they float on the top, remove them from the boiling water and place them onto a cooling rack, so they are not covered in water.
Put them in the zip log bags or plastic containers and you can freeze them for up to 2 months.
You can freeze them longer, but I found out after 1-2 months they won't be as fresh as freshly cooked ones.

To stop gluten-free pasta from falling apart you need to find the best ratio of flour and water.
When you add too much flour the pasta will be very thick and heavy, on the other side if you'll add more water it might not stick together.
That's why it's so important to find the ratio between flour and water.
Also, it is important to use a specific flour, otherwise, the whole recipe will be a disaster. Stick to buckwheat flour for the best results!
Let's make these healthy flourless pumpkin ravioli with roasted garlic butter!
First, make a pumpkin filling for a ravioli.
Start by roasting garlic in a little bit of oil. When the garlic is roasted add spices and pumpkin puree. Cook for about 2-3 minutes or until the flavors are combined. Remove from the heat and set aside.
Next, create a gluten-free ravioli dough.
Start by combining these ingredients:
- buckwheat flour
- rice flour
- salt
- baking powder
- water
Create a smooth dough and roll it out onto the well-floured surface. Roll the dough as thinly as possible. It should be really easy to work with. Remember, always use flour so the dough doesn't stick to the surface!
Using a pizza cutter cut medium-sized squares out of the dough. Place a heaping teaspoon of pumpkin filling in the center. Brush the water around the edge and top with a second layer of the dough. Press gently with your fingers to seal from each side. You can also use a fork to create different patterns.
Bring the water to a boil and add the ravioli to a large pot of boiling salted water. Cook for about 3 minutes, until the pasta is floating on top.
When the ravioli are done, preheat the saucepan and add vegan butter, coconut oil, and garlic. Roast until golden brown. Lastly, add salt and pepper and remove from heat.
Serve the ravioli with roasted garlic butter and fresh herbs. Enjoy!

Gluten-free ravioli
- 1 cup buckwheat flour
- 1/3 cup rice flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/3 cup water
- 35 oz water *for cooking the ravioli
Garlic butter
- 1 tbsp vegan butter
- 1 tbsp coconut oil
- 1 tbsp minced garlic
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- In a saucepan heat the oil and fry minced garlic with spiced until golden. Then add pumpkin puree and sautee for about 2 minutes. Remove from the heat and set aside.
- Next, in a large bowl combine buckwheat flour, rice flour, baking powder, salt, and water. Create a smooth dough.
- Roll the dough thinly onto the floured surface. Using a pizza cutter cut squares out of the dough. Place a heaping teaspoon of pumpkin filling in the center. Brush the water around the edge and top with a second layer of dough. Press gently with your fingers to seal.
- Add the ravioli to a large pot of boiling salted water. Cook for about 3 minutes, until the pasta is al dente.
- Lastly, in a saucepan fry the garlic in the vegan butter, and oil until crispy. When the garlic is golden add spices and remove from the heat.
- Serve with garlic butter and fresh herbs. Enjoy.
I plan on making this as soon as possible, but I'm not sure I will find buckwheat flour, what would you recommend instead. it looks amazing, thank you.
Buckwheat flour works the best, but maybe a gluten-free flour mix would work too, but I haven't tested it out!

I attempted the recipe tonight and my dough never became firm, it was very loose and there was no way I could have rolled it, it would have ran off the counter. I followed the recipe exactly, my question is I bought sprouted buckwheat flour, is this the same as buckwheat, could have this made the difference?
Oh, sprouted buckwheat flour won't work for this recipe. Just use regular buckwheat flour!
