Lentil dhal with white rice and sauteed veggies
I love cooking with lentils. The texture is so special that can easily be enjoyed in many dishes. In this recipe, I used red lentils to make lentil dhal with white rice and sauteed veggies. This is the meal I truly love. It is hearty, flavorful, and absolutely delicious. A full meal is very easy to make and you can prepare lunch or dinner in 20 mins!
Red lentils are so healthy for us. They contain lots of vitamins, minerals, and a good amount of protein. Lentils will make you feel full longer and they are so satisfying. I love to prepare this lentil dhal with curry spices, which contains turmeric. This is a very powerful spice contains powerful anti-inflammatory effects and is a very strong antioxidant.
The best part of the recipe is that you don't have to soak your lentils overnight in the water. Red lentils cook easily without soaking them. This is a huge plus! However, if you have digestive problems with eating legumes, definitely soak them for at least half an hour, in advance.
The whole meal is so delicious. The fragrant lentil dhal, served with white rice and sauteed veggies, is absolutely amazing. This meal is full of flavor, nutrients, and absolutely satisfying.

1 tbsp oil
3 small cloves of garlic
1 tsp curry spice
1 cup red lentils
1 1/2 cups water
1 bay leaf
Salt and black pepper
1/2 cup soy cream
Juice of half of lemon
1 tbsp oil
1 large zucchini
1 green pepper
A handful of kale
Spices to taste
In a larger pot, heat the oil, add in the garlic and fry along with the curry spice. Add pre-rinsed red lentils and pour water. Bring to a boil and cook for about 7 minutes. Then add soy cream, spices, and lemon juice. When the lentil dhal is ready, fry the vegetables in a little bit of oil. After 5 minutes, add the spices and cook for a few more minutes. Finally, add the curly kale and mix everything well.
Serve with rice, lentil dhal, and sauteed vegetables. Enjoy!
