Gluten-free pumpkin spiced donuts
Autumn is slowly knocking on our door and that means harvesting lots of pumpkins in our garden! They are so cute as a decoration but even more prettier and tastier in recipes. You can prepare so many recipes with them, that includes sweet or savoury like these gluten-free pumpkin spiced donuts. If you wanna bake something special, this is the recipe. It is so tasty, flavorful, and perfect for cozy autumn days.

Today I prepared a simple recipe for baked donuts with pumpkin puree and delicious sweet icing. I used only oat and millet flour, which worked perfectly. As a sweetener, I used date paste which is 100% natural and made of dates. But the most important part was pumpkin puree and pumpkin spice. Those ingredients gave such an amazing taste. Ingredients:
100g gf oat flour
100g millet flour
1 tbsp corn starch
1tsp baking powder
140g date paste + 100g boiling water
100g coconut milk
1/2 cup pumpkin puree
2 tsp flax meal
Vanilla extract
1 tsp pumpkin spice
100g water
Frosting:
powdered sugar + plant-based milk
Cinnamon
Instructions:
Mix all the dry ingredients together. In a smaller bowl combine date paste with boiling water, pumpkin puree, flax meal, coconut milk, and vanilla extract.
Pour wet ingredients into a dry and add water and pumpkin spice. Mix it all well.
Prepare a donut pan by gently greasing a coconut oil into donut holes. Carefully spoon the batter into a baking pan and bake them at 160°C for 15-20 mins.
Later prepare frosting by mixing powdered sugar and plant-based milk into a creamy consistency.
Top each donut with frosting and sprinkle cinnamon on top.
