Pancakes with caramelized nectarines


I personally don't know a single person who doesn't like pancakes. Especially these soft and fluffy pancakes with caramelized nectarines.

These pancakes are very easy to make. You will need just a few ingredients and you can easily make these delicious pancakes with caramelized nectarines anytime at home.

I used only one type of gluten-free flour in this recipe, which was oat flour. I found out, this flour works the best for me. You can use this flour in many recipes, but it works the best when cooking pancakes, or baking muffins! This flour makes pancakes a lot fluffier and softer, compared to the regular gluten-free flour mix. Into the batter, I also added rice milk, but you can use any plant milk or water. It will work just fine.

Since the nectarine season is full-on, and I love to top my pancakes with fruit, I decided to use them in this recipe. This time I haven't used raw fruit but I caramelized my nectarines on a pan, which made them sweeter, slightly crispier, and more flavourful. And because I used maple syrup, you can actually taste caramel flavor, which was perfectly combined with those nectarines. However, you can use peaches or apricots in this recipe as well.

Ingredients:

60g gf oat flour
1 tbsp flax meal
1 tsp baking powder
1/3 tsp baking soda
180g rice milk
vanilla extract
Nectarines
Maple syrup
Cinnamon

Method:

In a large bowl combine all the dry ingredients, add plant-based milk, vanilla extract and mix everything together. The batter should be thicker. Preheat your pan and cook the pancakes over medium-high heat. When they are all done, add nectarines to your pan and cook them for 5 mins. Then add maple syrup and cinnamon. Let them caramelized. Assemble your plate with pancakes and caramelized nectarines. Enjoy.
