Crumble banana bread with nectarines & plums

This is another very simple recipe for an amazing crumble banana bread with nectarines & plums. This time I also added seasonal fruits such as nectarines and plums! The bread is very soft and fluffy. I also added cardamom to the dough, which gave the dough a very delicate taste. However, you can safely omit cardamom, the bread will still be very tasty.

The fruit on top added extra freshness and a crumble crunchy and sweet finish. So if you are fan of crunchy toppings and juicy fruit on your banana bread, definitely try this recipe!

Ingredients:

50g gf oat flour
50g millet flour
30g buckwheat flour
50g almond meal
1 tsp baking powder
1/3 tsp baking powder
1/2 tsp cardamom
2 bananas
1 flax "egg" (1 tbsp of ground flax seeds mixed with 3 tbsp of water)
2 tbsp maple syrup
180g water
vanilla extract
Nectarine
Plum

For crumble:
2 tbsp gf oats
1 tbsp gf oat flour
2 tbsp maple syrup

Method:

In a large bowl combine all the dry ingredients. Add in mashed bananas, maple syrup, flax "egg", vanilla extract and water. Mix it all together.
Then make a crumble by mixing oats, oat flour, and maple syrup.
Pour the batter into a baking pan, decorate with fruits, crumble and bake at 160°C for 50-60 mins. Enjoy.
