Fluffy plum cake
Who would say that such a quick and easy recipe will be so delicious? I was very surprised by the final result! I'm a huge fan of fluffy cakes, muffins, or pies, and this recipe is everything I could ever imagine. Fluffy, sweet, soft and so juicy. I'm not kidding, this fluffy plum cake is the best thing you will ever bake in your gluten-free baking journey. You can impress everyone with this cake. The consistency is so perfect. You need to try this recipe asap. Especially in the summer when plums are in the season.
This fluffy plum cake is so good, you wouldn't even know it's gluten-free and vegan. The dough is super soft, it melts on the tongue. I also added plums on top, which were absolutely sweet and juicy. The full cake is sugar-free as well. I added date paste instead of sugar to the dough, but if you don't have it, simply soak the dates in water for a few minutes and blend them in a blender.
This soft plum cake is so flavourful, sweet plums, vanilla batter, and cinnamon on top is a heavenly combination. I have nothing else to say. You really have to try this recipe!

50g gf oat flour
50g buckwheat flour
50g almond meal
50g millet flour
1 tsp baking powder
1/3 tsp baking soda
50 g date paste
250 ml of water
First, pour warm water over date paste and mix well.
In a large bowl combine all the dry ingredients, add in the date mixture, 200 ml of water, and vanilla extract. When it is all combined, pour the batter in a pan with parchment paper, decorate with plums, sprinkle with cinammon and bake at 170°C for 30 mins.
Serve with powdered sugar or stevia on top. Enjoy.
