Simple red lentil curry with vegetables
I could eat curry every day. There is something special about that unique taste. This simple red lentil curry with vegetables is just so delicious. It is perfectly creamy, flavorful, and a little bit spicy. This is how I like it. The taste can be adjusted by personal preferences.

If you could ask me what is my favorite legume, I would say lentils. Lentils are the perfect food. They are packed with many nutrients and protein. The taste is also very smooth and comforting. There are several types of lentils, such as brown, green, red, etc. I love to use all of them, but in this particular recipe, I'm choosing red lentils. The time of cooking is very short, which is just perfect. You don't even need to soak them before cooking. However, if you have some digestive problems, you can, but it isn't necessary. Just don't forget to wash them before cooking. This is also a huge reason why I love them so much. They are so easy to cook, very nutritious and so tasty. You can prepare many meals out of them but this curry, just the best.
What is the best curry spice?
Answer to this question differs from person to person. It is really hard to answer it because we all prefer different things and tastes. However, there are so many curry spices out there, you just need to pick up the one and try if you like it. In this recipe, I used tandori masala, which is currently my favorite spice. It has a good amount of different types of herbs and spices.
In addition, you can add any vegetables to your curry. But the best ones are carrots, celery, and pepper. The combination of these veggies and curry spices along lentils is just magnificent. The recipe for simple red lentil curry with vegetables is just so good. This meal is perfect for cozy lunch or dinners with family.

Ingredients:
1 tbsp coconut oil
3 garlic cloves
1 tsp curry spice (I used tandori masala)
1 large carrot
1 stalk of celery
1 pepper
1 cup red lentils
2 bay leaves
2 cups of water
1 cup sliced chard
3 tsp of lemon juice
1/2 tsp salt
1/2 tsp black pepper
Instructions:
- In a pan add coconut oil and fry garlic along with curry spices and vegetables. Cook for a few minutes until the veggies started to be golden.
- Next, add the red lentils, bay leaves, and 1 1/5 cup water. Cover with a lid and cook for about 10 minutes.
- After 10 minutes, add the chard and the remaining water (if needed), and simmer for another 2-3 minutes.
- Lastly, add salt, pepper, and lemon juice. Serve with rice, millet, or even pasta. Enjoy!
