When I say salad, I don't mean fresh lettuce chopped in a bowl. Salads can be made with so many different ingredients, so why limit yourself to one single ingredient?

The base of this roasted potato and chickpea salad is pretty much obvious - greens. I love to start my salad with greens and slowly adding more veggies, depending on the season and what I have in the fridge.

In this recipe, I used greens as a base, continued with fresh veggies such as cucumber, pepper, tomato, and carrot. You can use whatever you have in your house. There are no limitations.

Next, you will need to add some starch or grains. I used baked potatoes because they are so easy to make and so delicious in the salads!

Also, I added chickpeas for some protein, but you can use different types of beans, lentils, tempeh, or even tofu.

Lastly, we cannot forget about dressing. The dressing makes every salad a lot better. By adding dressing into a salad you can create a really moist and juicy salad recipe.

Start by combining ingredients for fresh salad, which are:

Meanwhile, we can prepare our roasted chickpeas, simply add chickpeas into a pan with a little bit of oil and seasonings. Cook until the chickpeas are golden and fragrant.

We cannot forget about the dressing, right?

Start by preparing all of the ingredients and put them into a blender. The main ingredient is avocado. This gives a nice flavor and creaminess.

When everything is ready, serve with fresh salad, baked potatoes, roasted chickpeas, and avo dressing. Enjoy!

Ingredients
  

  • 2 cups mixed greens
  • 1 tomato
  • 4 radishes
  • 1/2 cup chopped cucumber

Baked potatoes

  • 4 potatoes
  • 2 tbsp neutral oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Roasted chickpeas

  • 1 1/2 cup cooked chickpeas
  • 1 tbsp neutral oil
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp smoked paprika

Dressing

  • 1 avocado
  • 2 tbsp vegan mayo
  • 1/3 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp lemon juice

Instructions
 

  • First, let's prepare a salad base by combining fresh greens, chopped tomatoes, radishes, and cucumber. Set aside and let's move to the next step.
  • Prepare a baking sheet and add chopped potatoes into small pieces along with seasonings, and oil. Combine and bake at 180°C (400F) for about 40 minutes or until golden.
  • Meanwhile roast chickpeas on the pan with oil and seasonings. Cook for about 5 minutes or until golden brown.
  • Lastly, let's make the dressing. Into a blender add avocado, vegan mayo, salt, pepper, and lemon juice. Blend until smooth and creamy.
  • Serve with fresh salad, baked potatoes, chickpeas, and drizzle some dressing on top. Enjoy!
