Sweet potato & carob brownies


If you think about brownies, you will imagine a fudgy chocolate consistency with a crunchy crust and crumbly inside. This is how a traditional brownie looks like. I tried to make these delicious brownies a little bit healthier with several changes.

The main ingredients of brownies are high-quality cacao and chocolate, but in this recipe, I tried something new, and I changed those ingredients.

I decided to bake brownies with carob powder in a slightly healthier version. Classic brownies are quite dense and "chewy", so I decided to add dates and boiled sweet potatoes, which not only sweetened the brownies but they also created the right consistency.

As you can probably tell by the title, this is a recipe for sweet potato & carob brownies. If you wanna know how to make this delicious cake then keep on reading.

Why carob powder?

Carob powder is such a nice alternative to cacao powder.

Some people have allergies to cacao and that's why I created this amazing brownie recipe.

Also, carob powder is so yummy. It is sweet than cacao and more "fruity" in my opinion. Cacao is bitter and really strong, carob is totally different and it is milder.

Let's make these sweet potato & carob brownies

First, you will need to blend dates, sweet potato, vanilla, and a little bit of milk into a smooth consistency.

You can use a high-speed blender, but a food processor is totally fine!

Next, in a large bowl combine dry ingredients, which are:

  • millet flour
  • gf oat flour
  •  tapioca flour
  • baking powder
  • baking soda
  • carob powder

When these ingredients are combined, add the date mixture and the rest of the plant milk.

Combine and create a smooth batter.

Pout the batter into a baking pan and bake for about 30-40 minutes.

When the brownies are done, let them cool down completely and then decorate with carob chocolate. Enjoy!

SWEET POTATO & CAROB BROWNIES

Ingredients
  

  • 10 fresh pitted dates
  • 1 small cooked sweet potato
  • 1 tsp vanilla extract
  • 1/3 cup millet flour
  • 1/3 cup  gf oat flour
  • 1 tbsp tapioca flour
  • 1 tsp baking powder
  • 1/3 tsp baking soda
  • 2 tbsp carob powder
  • 1/2 cup plant-based milk

Instructions
 

  • In a food processor blend dates, sweet potato, vanilla extract, and a splash of milk into a smooth consistency. 
  • In a large bowl combine flours, baking powder, baking soda, and carob powder. Then add the date mixture and plant-based milk. Mix it all and bake at 160°C for about 35-40 mins.
  • After baking let it cool completely and decorate with carob or chocolate. Enjoy!
