Tiramisu cupcakes - gluten-free and vegan
Tiramisu was one of my favorite desserts of all time. I loved the creaminess, the coffee flavor, and the cacao powder on top! There is something special about the cacao and coffee combination. If you love this combination as I do, you need to try these gluten-free and vegan tiramisu cupcakes.
These tiramisu-inspired cupcakes are heavenly delicious.
The cupcakes are full of flavor, they are very soft, fluffy, and moist. Vegan coffee frosting on top is buttery, smooth, and airy.

What makes gluten-free cupcakes light and fluffy?
Gluten-free baking might be harder for some beginners, but when you find the best ingredients, the baking will be a lot easier.
Try these ingredients to make the softest cupcakes:
- Baking powder and baking soda.
- Melted vegan butter or margarine
- A mix of gluten-free flours, preferably oat, buckwheat, and rice flour.
- Lemon juice or vinegar.
- Apple sauce or mashed banana.

Is there a vegan alternative to mascarpone?
Yes, there is! Since the vegan industry is always evolving, new products are always created, including vegan tiramisu.
But I'm sure this type of product can be found in specialized stores or vegan stores since it's a new product. You can check out this brand!
However, I created my own version of buttery mascarpone as a frosting. But if you do not have time and patience you can totally buy vegan mascarpone at the store and use it as a frosting.
Does tiramisu taste like coffee?
Yes, tiramisu tastes like coffee and cacao. It is a combination of strong coffee flavor and rich cacao. With a creamy frosting, it creates the best flavors.
In this recipe, I used coffee and cacao in the batter and instant coffee into the frosting. This combination is so delicious. Don't forget to dush some cacao powder on top of the cupcakes for a nice finish.

To make these cupcakes you will need to bake muffins first, and then decorate them with creamy vegan coffee frosting.
Start by creating muffins.
In a large bowl combine these ingredients:
- gf oat flour
- buckwheat flour
- rice flour
- baking powder
- baking soda
- cane sugar
- cacao powder
- instant coffee
Combine and set aside.
In the other bowl combine soy milk with lemon juice and almond extract. The soy milk will curdle and this will create vegan buttermilk.
Pour the vegan buttermilk into the dry ingredients, along with melted vegan butter, and apple sauce.
Create a smooth and creamy dough.
Spoon the batter into a muffin pan lined with parchment paper or silicone muffin cups. Bake them for about 25 minutes.
Meanwhile, prepare a vegan & dairy-free coffee frosting.
In a medium-sized pot add soy milk, sugar, and cornstarch. Cook until thick but creamy. Don't forget to whisk it until the boiling point because it might burn easily.
The consistency should be thick but creamy and smooth. Let the cornstarch mixture cool down completely before the next step.
In a large bowl which vegan butter and powdered sugar until fluffy using a hand mixer. Add cornstarch mixture and instant coffee. Whisk until combined.
Decorate the muffin with the coffee frosting and dush with cacao powder. Enjoy!

Tiramisu cupcakes - gluten-free and vegan
Ingredients
Muffins
- 3/4 cup gf oat flour
- 1/3 cup buckwheat flour
- 1/3 cup rice flour
- 1 tsp baking powder
- 1/3 tsp baking soda
- 1/2 cup cane sugar
- 1 tbsp cacao powder
- 1 tsp instant coffee
- 1 cup  soy milk
- Juice of half of lemon
- 1 tsp almond extract
- 3 tbsp apple sauce
- 1/3 cup melted vegan butter
Vegan coffee frosting
- 3/4 cup soy milk
- 5 tbsp cornstarch
- 2 tbsp brown sugar
- 1 cup vegan margarine * room temperature
- 1/2 cup powdered sugar
- 1 tsp instant coffee
- 2 tbsp cacao powder for dusting
Instructions
- In a large bowl combine oat flour, buckwheat flour, rice flour, baking powder, baking soda, sugar, cacao powder, and instant coffee.
- In the other bowl combine soy milk, lemon juice, and almond extract.
- Pour the wet ingredients into dry and combine. Next, add apple sauce, and melted vegan butter. The batter should be creamy, smooth, and fluffy.
- Carefully combine, and spoon the batter into a muffin pan lined with parchment paper or silicone muffin cups. Bake them at 400F (200°C) for about 25 minutes.Â
- Meanwhile, prepare a vegan coffee frosting.
- In a medium-sized pot add cornstarch, 2 tbsp sugar, and soy milk. Bring it to a boil and cook for about 1 minute until thick. Next, remove from the heat and let the mixture cool down before moving to the next step.
- In a large bowl whisk vegan margarine and powdered sugar until fluffy. Next, add cornstarch mixture, and powdered sugar. Whisk until creamy, smooth, and fluffy.
- Decorate muffins with vegan coffee frosting and dust with cacao powder. Enjoy!

Is there a sub for oat flour? I can't do oats.
Hi! Oat flour gives these muffins their specific taste and texture. However, you can replace it with sorghum, tapioca, or millet flour + 1 tsp of xanthan gum. This might work 🙂
