Amazing gluten-free blackberry cupcakes
Fresh, creamy, and light. Yes, I'm talking about these amazing gluten-free blackberry cupcakes. There is nothing better than a creamy fruity dessert that is easy to make and very delicious.
For these cupcakes, I choose the blackberry flavor. Blackberries are amazing. They are perfect as a topping on smoothies, oats, or as a snack. But have you tried them in cupcakes? I also added blackberries into the batter and to the frosting. So the blackberry flavor is so refreshing, juicy and so good!
Cupcakes are perfection
Sometimes you just don't want to bake a cake, in that case, if you want something similar to a cake but easier to make, here are the cupcakes.
Cupcakes are very simple to make and so cute. You can use different types of fruit, different types of frosting, or add cacao powder or cinnamon to make them extra delicious.
In this recipe, I choose blackberries into the batter and I also added them into the frosting. Let's make these incredible gluten-free blackberry cupcakes.

Let's start with cupcake batter. For this part you will need:
- gluten-free oat flour
- rice flour
- brown sugar
- date syrup
- baking powder
- baking powder
- A pinch of salt
- soy milk
- vinegar/lemon juice
- vanilla
- blackberries
First combine dry ingredients, which are oat flour, rice flour, brown sugar, baking powder, baking soda, and a pinch of salt. These are our main ingredients.
Next, add date syrup, soy milk, vinegar or lemon juice, and vanilla. Combine until there are no lumps. The batter should be really creamy and smooth.
Lastly, add blackberries and combine them into the batter.
Next, bake them for about 30 minutes or until golden.
Meanwhile, prepare a blackberry frosting. For this frosting you will need:
- coconut milk / only the solid part
- powdered sugar
- vanilla
- blackberry puree
Whisk the solid part of coconut milk in a medium-sized bowl. Add powdered sugar vanilla and blackberry puree. Whish for a few seconds and let it sit in the fridge for about 1 hour.
When the cupcakes are out of the oven, let them cool down completely before decorating them with frosting.
So when the cupcakes are completely cold, you can frost them with blackberry frosting and decorate them with fresh blackberries. Enjoy!

Ingredients
Cupcake batter
- 100 g gluten-free oat flour
- 100 g rice flour
- 40 g brown sugar
- 2 tbsp date syrup
- 1 tsp baking powder
- 1/3 tsp baking powder
- A pinch of salt
- 200 g soy milk
- 1 tsp vinegar / lemon juice
- 1 tsp vanilla
- 3/4 cup blackberries
Blackberry frosting
- 1 can coconut milk / only the solid part
- 2 tbsp powdered sugar
- 1 tsp vanilla
- 3 tbsp blackberry puree
Instructions
- In a large bowl combine dry ingredients, which are rice flour, oat flour, baking powder, baking soda, a pinch of salt, and sugar. Next, add date syrup, soy milk, vanilla, and vinegar. Combine and create a smooth and creamy batter. Lastly, add fresh blackberries and combine.
- Bake them at 180°C (350F) for about 30 minutes or until golden.
- Meanwhile, prepare a blackberry frosting by whipping the solid part of coconut milk, sugar, and vanilla until smooth. Next, add blackberry puree and combine. Put the frosting into the fridge for an hour before serving.
- When the cupcakes are completely baked, cool them down completely before decorating with blackberry frosting, otherwise, the frosting will melt.
- Lastly, decorate cupcakes with blackberry frosting and fresh blackberries. Enjoy!
The only ‘problem’ with these cupcakes is that it’s impossible to stop eating them! Such an easy and delicious recipe! Definitely making them again soon!
