This vegan crumble is so easy to make and perfectly delicious!
Do you have to peel peaches for this gluten-free cheesecake crumble?
The simple answer is no!
When baking peaches, the skin usually softens, so it is not necessary to peel the peaches.
But if you decide to peel the peaches for some reason, the crumble will be basically the same!
It really doesn't make a huge difference!
If you prefer to peel the skins, feel free to do it, but if you don't mind the skins, the crumble will be good anyway!
Let's make this vegan peaches and cream cheesecake crumble
The recipe can be divided into three parts. The first one is to make a crust, the second one is to blend ingredients for a cheesecake filling and the last one is to make a crumble that will go on top of the cake!
First, let's make a gluten-free crust.
In a large bowl combine these ingredients:
- rice flour
- potato starch
- baking powder
- powdered sugar
- vegan margarine
- soy milk
The dough should be thick but still smooth and easy to work with.
Prepare a baking pan and line it with parchment paper. Spread the dough onto the pan and bake for about 5 minutes.
Meanwhile, we can prepare the vegan cheesecake filling and a gluten-free crumble.
To make a cheesecake filling, you will need to add these ingredients into a blender:
- tofu
- soy milk
- lemon juice
- powdered sugar
- potato starch
Blend until smooth and creamy. It will be really liquidy but don't worry, because of the starch, it will become thicker eventually!
Next, in the other bowl combine ingredients for a gluten-free crumble:
- vegan margarine
- rice flour
- cinnamon
- powdered sugar
Combine those ingredients in a bowl and don't be afraid to use your own hands! The crumble will be crumbly, so don't worry, this is the right consistency!
When the crust is out of the oven, carefully pour the cheesecake filling into the crust, add sliced peaches and finish with crumble on top.
Bake for about 50 minutes or until golden brown.
Serve dusted with powdered sugar. Enjoy!
Tip: just wait until this peach cheesecake crumble will be completely cold before serving!
This gluten-free and vegan peach cheesecake crumble is absolutely amazing! The crumble is so flavorful, creamy, buttery and so light. This is a perfect dessert for you to make this afternoon!
