Gluten-free orange cranberry loaf
This is a season of special moments, food, and atmosphere. Food is a very important part of any holiday. With that being said, I prepared an amazing but festive recipe you need to make this holiday. This gluten-free orange cranberry loaf is magical. It is full of flavors, very delicious, and so festive.
It's all about the flavors
Orange and cranberries are such a delicious combination. They are both sour but in a different way. Those ingredients created the main part of this loaf. I also added dates which created a very nice, caramel flavor. I love using dates in many recipes. The loaf is moister, perfectly sweet and so tasty.
So the flavors were mainly made by those 3 ingredients. This gluten-free cranberry loaf is slightly sour with caramel after taste. These ingredients complement each other beautifully.
Lets' make this gluten-free orange cranberry loaf
This recipe is one of those easy recipes you can make anytime!
For this recipe you will need just a one bowl and a blender.
Since I'm using dates, you need to blend them first.
Prepare a blender and let's blend those ingredients:
- water
- orange juice
- dates
Those are our wet ingredients. Blend them until smooth and creamy.
Next, combine our dry ingredients, which are:
- buckwheat flour
- rice flour
- baking powder
- baking soda
- flax meal
Now, when we blended our wet ingredients and prepared dry ones, it's time to combine them together.
Pour the orange & date mixture into the dry ingredients, and combine until a smooth and creamy batter.
Lastly, add in chopped cranberries. I added 1/2 cup, but if you like cranberries, feel free to add more.
Pour the batter into a baking pan, and bake for 1 hour.
Meanwhile, prepare an orange icing. This is my all-time favorite icing. It is sweet, with sour tones. It's absolutely delicious.
Mix all of the ingredients for the icing, which were powdered sugar and orange juice. The consistency should be pretty thick, in order to be snowy white.
Top this gluten-free orange loaf with icing and you are done! but make sure you are topping the loaf when it's completely cold. Otherwise, the icing will melt.

Gluten-free orange cranberry loaf
Ingredients
Orange cranberry loaf
- 1 cup buckwheat flour
- 1/2 cup rice flour
- 1 tsp baking powder
- 1/3 tsp baking soda
- 1 tbsp flax meal
- 1 cup water
- 3/4 cup orange juice
- 1 cup dates
- 1/2 cup cranberries
Orange sugar icing
- 3/4 cup powdered sugar
- 6 tbsp orange juice
Instructions
- In a large bowl combine dry ingredients, which are flour, baking powder, baking soda, and flax meal.
- Next, prepare a blender and add in dates, orange juice, and water. Blend until smooth and creamy.
- Now, combine dry and wet ingredients together. The batter should be really creamy and fluffy.
- Lastly, add in chopped cranberries.
- Bake at 150°C for 1 hour.
- Meanwhile. prepare the icing by mixing powdered sugar and orange juice.
- When the loaf is out of the oven and completely cold, top with icing and enjoy.
