Tofu is an amazing ingredient. You can create really delicious savory recipes with it or you can eat it like this, with crepes, or add it into a pie or cake. There are basically endless options.

Tofu has a neutral taste, so you can add flavors and an amazing dipping sauce, cream, or even sauce.

This tofu & berry filling reminds me of a curd. It has similiar texture and even a taste.

I wanted my filling to be light purple, so I added berries, but this tofu mixture is good on its own. So this step is totally optional. But If you want to make it fancy, go for it! It is so worth it.

Let's make these gluten-free crepes with tofu & berry filling

First, prepare a larger bowl and combine all of the ingredients for crepes, which are:

  • gluten-free oat flour
  • rice flour
  • a pinch of salt
  • flax meal
  • soy milk
  • vanilla

Create a smooth batter and cook each crepe on a non-stick pan from both sides until golden. If your batter is too thick, use a spoon to spread the batter on the pan, as you can see in the video!

When the crepes are done, now it's the time to make this amazing and health tofu & berry filling.

You will need:

  • tofu
  • soy cream or soy milk
  • Juice of half of lemon
  • agave
  • vanilla
  • berries

Put all of your ingredients into a blender and blend until smooth. In this recipe, you can use whatever tofu you have, but the smoother the better!

Lastly, spread the tofu filling onto the crepes. Serve with some fresh berries and melted chocolate. Enjoy!

Ingredients
  

Crepes

  • 100 g gluten free oat flour
  • 100 g rice flour
  • A pinch of salt
  • 1 tbsp flax meal
  • 300 g soy milk
  • 1 tsp vanilla

Tofu & berry filling

  • 180 g tofu
  • 50 g soy cream * or soy milk
  • Juice of half of lemon
  • 4 tbsp agave
  • 1 tsp vanilla
  • 1/3 cup berries

Instructions
 

  • In a large bowl combine ingredients for crepes which are flours, salt, flax meal, soy milk, and vanilla. Create a smooth batter.
  • Cook the crepes from both sides on a non-stick pan until they are golden.
  • When the crepes are done, let's make tofu filling. Put everything into a blender and blend until smooth and creamy.
  • Serve each crepe with tofu filling and some melted chocolate on top. Enjoy!
