Do you peel zucchini for bread?

The simple answer is you don't need to!

However, if your zucchinis are homegrown don't worry about that skin. I usually eat the skin of the homegrown zucchini, because I know it is organic.

On the other side, if you bought your zucchini at the store and you are not sure if it is organic or not, you have two options:

  • You can wash your zucchini properly
  • Or you can peel the shin

So you don't really need to peel the zucchini. And if you are wondering if the skins are ok in the bread in terms of texture or consistency? My answer is you don't have to worry about that. The bread is baking for about 45 minutes, so it has plenty of time for zucchini to be soft.

Yes, you can see the zucchini when you are slicing the bread, but you won't know there is zucchini when you eat the bread.

Let's make this healthy gluten-free zucchini bread

To make this zucchini bread you will need only one bowl.

Start by combining wet ingredients first:

  • oat milk
  • shredded zucchini
  • brown sugar
  • flax egg
  • vanilla

Next, add gluten-free flour and baking powder.

Combine it together until you created such a creamy and smooth batter.

In this recipe, I used a gluten-free flour mix. This is basically the first-ever gluten-free flour mix I like! I used this one, and I found it in Lidl, however, I did some research and these flours have almost the same ingredients!

The first very similar flour is King Arthur's gluten-free flour.

The second one is Bob's Red Mill gluten-free flour.

Lastly, add in chocolate chips or chunks and combine.

Pour the batter into the square bread pan and bake for about 45 minutes.

When the bread is done, wait until it is completely cold, so you can cut it easily.

Dust with powdered sugar and serve with vegan butter or jam. Enjoy!

Ingredients
  

  • 1 cup oat milk
  • 1/2 cup zucchini
  • 1/2 cup brown sugar
  • 1 flax egg
  • 1 tsp vanilla
  • 2 cup all purpose gluten-free flour
  • 1 tsp baking powder
  • 1/2 cup chocolate chips/chunks

Instructions
 

  • In a larger bowl combine oat milk, shredded zucchini, brown sugar, flax egg, and vanilla.
  • Next, add gluten-free flour, baking powder and combine until you have nice and creamy batter.
  • Lastly, add chocolate chips or chunks.
  • Bake at 350F (180°C) for 45-50 minutes. Enjoy!
